Fresh Oyster Mushrooms
Gray Oyster- frequently used in Asian cookery, stir fry, soups, stews, and stuffed. Personally, I find the younger mushrooms have a much better taste and texture than the older specimens.
Yellow Oyster - Yellow mushrooms have hints of cinnamon and citrus.
However, in general, they are mildly flavored with a hint of earthiness.
Lemon thyme, Parsley, and Oregano go well with this mushroom.
Great in stir fry, sliced and Sauteed caps are great in omelets
Pink Oyster - have a slight bacon-like or ham flavor
Good with Rosemary, Coriander or Cilantro, Oregano
